Start With The Basic Mojito
Ingredients:
3 mint sprigs
2 tsp sugar
25ml fresh lime juice
40ml light rum
60ml soda water

Directions:
In a tall glass, add the lime juice, sugar and several mint leaves, then gently crush with a muddler or the back of a spoon.
Top with ice. Add rum and mix gently. Top off with soda water and garnish with mint.
To Make A Fresh Fruit Mojito…
Simply add five to seven berries or three to four kumquats during muddling and crush to release the juices.

To Make A South Side…
Use gin instead of rum and lemon instead of lime. This was a longstanding house drink at the 21 Club in New York, slightly more sophisticated than a simple gin and tonic.
To Make A Mint Julep…
Use 70ml bourbon instead of rum, and lose the lime and soda completely. The most manly of minty drinks, begin this cocktail by muddling together the sugar and mint with a splash of bourbon.

Add crushed ice halfway up the glass with the remainder of bourbon and stir until it frosts. Finish by mounding ice to the top of the glass and garnish with mint.
